BBQ Pork Mac and Cheese

Ingredients

Quantities are for 4 servings.

  • 1 1/4 lb Pork shoulder, cut into chunks
  • 1/2 cup BBQ sauce
  • 1 lb Elbow macaroni
  • 4 cups Sharp cheddar cheese, shredded
  • 2 cups Whole milk
  • 4 tbsp Butter
  • 3 tbsp Flour
  • 1/2 cup Panko breadcrumbs
  • 2 tbsp Fresh chives, chopped
  • 1/2 tsp Paprika

Instructions

  1. Season the pork shoulder chunks with salt and pepper. Braise in a covered pot with a splash of water or broth at 300°F (or simmer on the stovetop) for about 2.5-3 hours, until fork-tender, then shred and toss with the BBQ sauce.
  2. Preheat oven to 375°F and cook the macaroni according to package directions.
  3. In a large pot, melt the butter, whisk in the flour, and cook 1 minute. Gradually add the milk, whisking until smooth.
  4. Add 3 cups of the cheese and stir until melted. Season with salt and pepper.
  5. Mix in the cooked macaroni and the BBQ pulled pork.
  6. Transfer to a greased 9x13 dish, top with the remaining cheese and the breadcrumbs.
  7. Bake for 25-30 minutes, until bubbly and golden. Garnish with chives.
