- 1 3/4 lb Flank or sirloin steak, thinly sliced
- 12 oz Chow mein noodles
- 2 cups Cabbage, shredded
- 2 each Carrots, julienned
- 1 cup Bean sprouts
- 1 can (8 oz) Water chestnuts, canned
- 3 cloves Garlic
- 1 tbsp Fresh ginger, grated
- 3 tbsp Soy sauce
- 2 tbsp Oyster sauce
- 1 tsp Sesame oil
- 2 each Scallions
- 2 tbsp Vegetable oil
Instructions

- In a small bowl, whisk together the soy sauce and oyster sauce. Set aside.
- Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat until shimmering. Add the sliced steak in a single layer and cook 2-3 minutes, stirring occasionally, until browned and no longer pink, reaching at least 145°F. Remove to a plate.
- Add the remaining oil to the skillet along with the garlic and ginger; cook 30 seconds until fragrant. Add the cabbage and carrots and stir-fry 3-4 minutes until just tender-crisp.
- Add the drained water chestnuts, bean sprouts, cooked noodles, beef, and the sauce mixture. Toss everything together for 2-3 minutes over high heat until well combined and heated through.
- Drizzle with the sesame oil, top with sliced scallions, and serve immediately.
