Ingredients
Quantities are for 4 servings.
- 2 cans (15 oz each) Black beans, canned, drained and rinsed
- 1 cup Plain breadcrumbs
- 1 each Eggs
- 1/2 each Yellow onion, diced small
- 2 cloves Garlic
- 1 tsp Ground cumin
- 1 tsp Chili powder
- 4 each Hamburger buns
- 4 each Cheddar cheese slices
- 1 set Lettuce, tomato, and red onion (for topping)
- 3 tbsp Mayonnaise
- 2 lb Sweet potatoes
- 2 tbsp Olive oil
- 1 tsp Salt
- 1/2 tsp Black pepper
Instructions
- Heat oven to 425°F. Cut the sweet potatoes into fry-shaped sticks, toss with the olive oil, salt, and pepper, and spread on a sheet pan in a single layer.
- Roast the sweet potato fries 25-30 minutes, flipping halfway, until tender and browned at the edges.
- Meanwhile, pat the rinsed black beans dry with paper towels (extra moisture is what makes bean burgers fall apart). Mash them in a large bowl, leaving some texture. Stir in the breadcrumbs, egg, onion, garlic, cumin, chili powder, salt, and pepper until combined.
- Shape into 4 patties about 3/4 inch thick and chill them 15 minutes so they firm up. Heat a lightly oiled skillet over medium heat and cook the patties 4-5 minutes per side, flipping only once, until browned and heated through (160°F) — add a slice of cheese in the last minute if you like it melted.
- Toast the buns if you like, then build the burgers with lettuce, tomato, red onion, and a spread of mayonnaise.
- Serve with the sweet potato fries.
