Blackened Fish with Mango Salsa and Rice

Ingredients

Quantities are for 4 servings.

  • 4 each (6 oz) White fish fillets (tilapia, cod, or mahi-mahi)
  • 2 tbsp Olive oil
  • 1 tbsp Italian seasoning
  • 1/2 tsp Garlic powder
  • 1/2 tsp Red pepper flakes (optional)
  • 2 each Mangoes, diced
  • 1/2 each Red onion, finely diced
  • 2 tbsp Fresh cilantro, chopped
  • 1 tbsp White vinegar (or apple cider vinegar)
  • 1 1/2 cups (dry) White rice

Instructions

  1. Cook the rice according to package directions.
  2. While the rice cooks, make the mango salsa: combine the mango, red onion, cilantro, and vinegar in a bowl, and season with salt to taste.
  3. Mix the Italian seasoning, garlic powder, and red pepper flakes (if using) in a small bowl.
  4. Pat the fish dry and brush both sides with olive oil, then rub the seasoning mixture generously on both sides.
  5. Heat a large skillet over medium-high heat and cook the fish 3-4 minutes per side, until it flakes easily and reaches 145°F internally.
  6. Serve the fish over the rice, topped with the mango salsa.
