Cajun Sausage & White Bean Skillet

Ingredients

Quantities are for 4 servings.

  • 13 oz Smoked sausage (andouille or kielbasa)
  • 2 cans (15 oz) Cannellini beans, canned
  • 1 can (14.5 oz) Diced tomatoes, canned
  • 5 oz bag Baby spinach or kale
  • 1 each Yellow onion
  • 3 cloves Garlic
  • 1 cup Chicken broth
  • 1 tbsp Cajun seasoning
  • 1 tbsp Olive oil

Instructions

  1. Slice the sausage into 1/2-inch coins. It's fully cooked already, so browning it in a large skillet over medium-high heat (about 4 minutes, flipping once) is just for flavor and color. Remove to a plate.
  2. In the same skillet, add the diced onion and cook 3-4 minutes, stirring occasionally, until softened and translucent. Add the minced garlic and Cajun seasoning and cook 1 minute more, stirring, until fragrant.
  3. Add the diced tomatoes (with their juices), the drained and rinsed cannellini beans, and the chicken broth. Bring to a simmer and cook 8-10 minutes, stirring occasionally.
  4. Return the sausage to the skillet and stir in the spinach or kale, a handful at a time, until just wilted, about 2 minutes.
  5. Taste and adjust the seasoning. Serve hot, with crusty bread on the side if you have it.
