Ingredients
Quantities are for 4 servings.
- 0.85 lb Ground beef (80/20)
- 12 oz Rotini pasta
- 1/2 each Yellow onion, diced
- 2 cloves Garlic
- 1 can (15 oz) Tomato sauce
- 1 can (14.5 oz) Diced tomatoes, canned
- 2 tbsp Ketchup
- 1 tsp Yellow mustard
- 8 oz Shredded cheddar cheese
- 1/2 cup Milk
- 2 tbsp Dill pickles, diced (for topping)
Instructions
- Heat oven to 375°F. Bring a large pot of salted water to a boil and cook the pasta 2 minutes short of package directions (it will finish cooking in the oven). Drain.
- While the pasta cooks, brown the ground beef and diced onion in a large oven-safe skillet or pot over medium-high heat, breaking up the meat, about 6-7 minutes, until no pink remains and the beef reaches 160°F internally. Drain excess fat.
- Stir in the garlic and cook 1 minute. Add the tomato sauce, diced tomatoes, ketchup, and mustard, and simmer 5 minutes.
- Stir in the milk and half the cheddar cheese until melted and combined. Fold in the drained pasta until evenly coated.
- If your skillet isn't oven-safe, transfer everything to a greased 9x13-inch baking dish. Top with the remaining cheddar cheese.
- Bake uncovered 15-18 minutes, until the cheese is melted and bubbling at the edges.
- Let rest 5 minutes, then scatter the diced pickles over the top before serving.
