Ingredients
Quantities are for 4 servings.
- 1 1/2 lb Ground beef (80/20)
- 3/4 cup Plain breadcrumbs
- 1 each Eggs
- 1 each Yellow onion, diced
- 2 cloves Garlic
- 1/2 cup Ketchup
- 1 tbsp Worcestershire sauce
- 1 tbsp Brown sugar
- 2 lb Russet potatoes
- 3 tbsp Butter
- 1/2 cup Milk
- 1 lb Green beans, fresh
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 tsp Garlic powder
Instructions
- Heat oven to 375°F. In a large bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, 2 tablespoons of the ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently with your hands just until combined — overmixing makes the meatloaf dense.
- Shape into a loaf on a foil-lined baking sheet or in a loaf pan.
- Stir together the remaining ketchup and the brown sugar for the glaze, and spread over the top of the meatloaf.
- Bake 55-65 minutes, until the internal temperature reaches 160°F.
- Meanwhile, peel and cube the potatoes and boil in salted water until fork-tender, about 15 minutes. Drain, then mash with the butter and milk until smooth. Season with salt and pepper.
- Steam or boil the green beans until crisp-tender, 5-6 minutes.
- Let the meatloaf rest 5-10 minutes before slicing. Serve with the mashed potatoes and green beans.
