Ingredients
Quantities are for 4 servings.
- 1 1/2 lb Chuck roast
- 3 cups Beef broth
- 1 each Yellow onion, thinly sliced
- 2 cloves Garlic
- 1 tbsp Worcestershire sauce
- 4 each Hoagie rolls or French bread
- 8 slices Provolone cheese, sliced
- 2 lb Frozen French fries
- 2 tbsp Olive oil (if making homemade fries)
Instructions
- Season the chuck roast with salt and pepper. In a Dutch oven over medium-high heat, sear it on all sides, about 3-4 minutes per side.
- Add the beef broth, half the sliced onion, and the garlic. Bring to a simmer, cover, and cook over low heat (or in a 300°F oven) for about 1.5-2 hours, until the beef shreds easily with a fork.
- Remove the beef and thinly slice or shred it; strain and reserve the cooking liquid as au jus.
- Preheat the oven according to the frozen fry package directions (usually 425°F). Arrange the fries on a sheet pan and bake according to the package instructions, usually 20-25 minutes.
- Meanwhile, in a large skillet, heat a drizzle of olive oil over medium heat and caramelize the remaining sliced onion, about 10 minutes.
- Add the sliced beef, Worcestershire sauce, and 1/2 cup of the reserved cooking liquid to the skillet. Heat through.
- Bring the remaining cooking liquid to a simmer in a small saucepan to use as au jus.
- Split the rolls, top with the beef mixture and provolone, and broil for 2-3 minutes until the cheese is melted and the bread is toasted.
- Serve the sandwiches with the fries and small bowls of au jus for dipping.
