Garlic Butter Shrimp with Lemon Rice Pilaf

Ingredients

Quantities are for 4 servings.

  • 1 lb Medium shrimp, peeled and deveined
  • 1 1/2 cups (dry) White rice
  • 3 cups Chicken broth
  • 1 lb Green beans, trimmed
  • 3 tbsp Butter
  • 3 tbsp Olive oil
  • 4 cloves Garlic
  • 2 each Lemons (1 juiced, 1 sliced)
  • 1/4 cup Fresh parsley, chopped
  • 1 tsp Dried oregano

Instructions

  1. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large saucepan. Add the rice and stir 2 minutes.
  2. Add the chicken broth and bring to a boil. Reduce heat, cover, and simmer 18 minutes.
  3. Steam the green beans until tender-crisp, about 5 minutes.
  4. Heat the remaining olive oil in a large skillet over medium-high heat. Season the shrimp with salt, pepper, and the oregano, and cook 2-3 minutes per side until opaque and pink throughout.
  5. In the same pan, melt the remaining butter with half the garlic and the lemon juice.
  6. Fluff the rice with a fork and stir in the parsley and remaining garlic.
  7. Serve the shrimp over the rice with the green beans, drizzled with the garlic butter.
