Ingredients
Quantities are for 4 servings.
- 1 1/4 lb Shrimp, peeled and deveined
- 2 tbsp Olive oil
- 3 cloves Garlic
- 1/2 each Yellow onion
- 1 can (14.5 oz) Diced tomatoes, canned
- 1 tsp Dried oregano
- 4 oz Feta cheese, crumbled
- 1 bunch Parsley
- 1 loaf Crusty bread

Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook 3-4 minutes until softened. Add the minced garlic and cook 1 minute more.
- Stir in the diced tomatoes (with their juices), oregano, and white wine if using. Simmer 8-10 minutes, stirring occasionally, until slightly thickened. Season with salt and pepper.
- Pat the shrimp dry and nestle them into the tomato sauce in a single layer. Cook 4-5 minutes, turning once, until the shrimp are fully opaque throughout with no gray or translucent centers.
- Scatter the crumbled feta over the top and let it warm through and soften for 1-2 minutes, but not fully melt.
- Sprinkle with chopped parsley.
- Serve straight from the skillet with crusty bread for scooping up the sauce.
