Ingredients
Quantities are for 4 servings.
- 10 oz Halloumi cheese
- 2 each Zucchini
- 1 each Red bell pepper
- 1 each Red onion
- 1 pint Cherry tomatoes
- 3 tbsp Olive oil
- 1 1/2 cups Couscous
- 1 each Lemon
- 1 package Fresh mint or parsley
- 1 pack Wooden skewers
Instructions
- Soak the wooden skewers in water for 20 minutes. Cut the halloumi into 1-inch cubes and the zucchini, bell pepper, and onion into similarly sized pieces.
- Thread the halloumi, vegetables, and cherry tomatoes onto the skewers, alternating pieces. Brush all over with 2 tablespoons olive oil and season with salt and pepper (go light on salt — halloumi is already salty).
- Heat a grill pan or outdoor grill to medium-high heat. Grill the skewers 8-10 minutes, turning every 2-3 minutes, until the vegetables are tender and lightly charred and the halloumi is golden with grill marks on each side.
- Meanwhile, prepare the couscous according to package directions, then fluff with a fork and stir in the remaining 1 tablespoon olive oil and the juice of the lemon.
- Chop the mint or parsley and stir most of it into the couscous, saving a little for garnish.
- Serve the skewers over the couscous, sprinkled with the remaining herbs.
