Ground Beef & Vegetable Stir-Fry over Rice

Ingredients

Quantities are for 4 servings.

  • 3/4 lb Ground beef (80/20)
  • 1 1/2 cups Jasmine rice, uncooked
  • 3 cups Broccoli florets
  • 1 cup Carrots, shredded
  • 3 cloves Garlic
  • 1 tbsp Fresh ginger, grated
  • 3 tbsp Soy sauce
  • 1 tbsp Brown sugar
  • 1 tbsp Sesame oil
  • 1 tbsp Vegetable oil
  • 2 each Green onions, sliced

Instructions

  1. Cook the rice according to package directions.
  2. While the rice cooks, whisk together the soy sauce, brown sugar, and sesame oil in a small bowl.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it into small crumbles, about 5-6 minutes, until no pink remains and it reaches 160°F internally. Drain any excess fat and push the beef to one side of the pan.
  4. Add the broccoli and carrots to the empty side of the pan and stir-fry 4-5 minutes, until the broccoli is bright green and just tender-crisp.
  5. Add the garlic and ginger and stir-fry 30 seconds until fragrant, then mix everything together.
  6. Pour the sauce over the beef and vegetables and toss to coat, cooking 1-2 minutes more until heated through and glossy.
  7. Serve over the rice, topped with sliced green onions.
