Ingredients
Quantities are for 4 servings.
- 1 3/4 lb Boneless pork chops (1-inch thick)
- 1/4 cup Honey
- 3 tbsp Soy sauce
- 1 tbsp Rice vinegar
- 1 tsp Cornstarch
- 5 cloves Garlic
- 1 1/2 lb Russet potatoes
- 10 oz Baby spinach
- 4 tbsp Vegetable oil
- 1/2 tsp Garlic powder
- 1 tsp Salt
- 3/4 tsp Black pepper
Instructions
- Start the potatoes first: heat the oven to 425°F. Cut the potatoes into 1-inch chunks, toss on a sheet pan with 2 tablespoons of the oil, the garlic powder, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper, and spread in a single layer. Roast 30-35 minutes, flipping once halfway, until golden and crisp at the edges.
- Pat the pork chops dry and season both sides with the remaining 1/2 teaspoon salt and 1/2 teaspoon pepper. Mince 4 of the garlic cloves and whisk them with the honey, soy sauce, and rice vinegar in a small bowl. In a separate cup, stir the cornstarch with 1 tablespoon of water.
- About 20 minutes before the potatoes are done, heat 1 tablespoon of the oil in a large skillet over medium-high heat. Sear the chops 4 minutes per side, until deeply browned. Wash your hands, the board, and any plate that held the raw pork, and use a clean plate for the cooked chops.
- Lower the heat to medium and pour the honey-garlic mixture around the chops (adding it now, not earlier, keeps the honey from burning). Stir in the cornstarch mixture and simmer 2-3 minutes, spooning the sauce over the chops and flipping once, until the sauce thickens and the chops reach 145°F in the center. Move the chops to a plate and let them rest 3 minutes.
- Wipe out a second large skillet, add the remaining 1 tablespoon of oil, and cook the remaining minced garlic clove over medium heat for 30 seconds. Add the spinach in handfuls (rinse it first unless the bag says it is pre-washed), stirring, until just wilted, 1-2 minutes. Season with a pinch of salt.
- Serve the chops with the roasted potatoes and spinach, spooning the extra sauce over the chops.
