Honey-Garlic Shrimp & Rice Bowls

Ingredients

Quantities are for 4 servings.

  • 1 1/4 lb Shrimp, peeled and deveined
  • 2 cups (dry) Jasmine rice
  • 4 cloves Garlic
  • 1 tbsp grated Fresh ginger
  • 3 tbsp Honey
  • 3 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 1/2 tsp Red pepper flakes
  • 2 cups Broccoli florets
  • 1 bunch Scallions
  • 1 each Lime

Instructions

  1. Cook the jasmine rice according to the package directions.
  2. Mince the garlic and grate the ginger. In a small bowl, whisk them together with the honey, soy sauce, sesame oil, and red pepper flakes to make the sauce.
  3. Steam the broccoli until just crisp-tender and bright green — a few minutes in a covered pot with an inch of simmering water, or microwaved in a bowl with a splash of water, covered, for 2-3 minutes. Set aside.
  4. Heat a large skillet over medium-high heat with a drizzle of oil. Add the shrimp in a single layer and sear 2-3 minutes per side, until pink and opaque and curled into a loose 'C' shape — a tightly curled 'O' shape means they've overcooked.
  5. Pour the sauce over the shrimp and toss 30-60 seconds until glossy and slightly thickened.
  6. Divide the rice among bowls, top with the shrimp and broccoli, and finish with sliced scallions and a squeeze of lime.
