Ingredients
Quantities are for 4 servings.
- 2 lb Salmon fillets
- 2 each Zucchini
- 1 pint Cherry tomatoes
- 2 each Lemon
- 1 package Fresh basil
- 3 cloves Garlic
- 2 tbsp Olive oil
Instructions
- Heat the oven to 400°F (or heat an outdoor grill to medium-high). Cut four large sheets of foil, about 12x16 inches each.
- Slice the zucchini into half-moons and halve the cherry tomatoes. Thinly slice the garlic and one of the lemons.
- Divide the zucchini and tomatoes among the foil sheets, drizzle with olive oil, and season with salt and pepper. Place a salmon fillet on top of each vegetable pile, season the salmon with salt and pepper, and top each with a few garlic slices, 2-3 lemon slices, and a few basil leaves.
- Fold the foil up and over each packet, sealing the edges tightly so steam can't escape.
- Place the packets on a sheet pan (or directly on the grill grates) and bake or grill 15-18 minutes, until the salmon flakes easily with a fork and reaches 145°F internally.
- Carefully open the packets (steam will be hot) and finish with a squeeze of juice from the remaining lemon and a scatter of fresh basil before serving.
