Ingredients
Quantities are for 4 servings.
- 2 1/2 lb Cod fillets
- 3 tbsp White miso paste
- 2 tbsp Mirin
- 1 tbsp Soy sauce
- 1 tbsp Brown sugar
- 4 heads Baby bok choy
- 1 tsp Sesame oil
- 1 tbsp Sesame seeds
- 2 each Scallions
- 2 cups Jasmine rice
Instructions
- Start the rice: cook the jasmine rice according to package directions (about 15-20 minutes). Keep it covered so it stays warm.
- While the rice cooks, heat the oven to broil (high). In a small bowl, whisk together the miso paste, mirin, soy sauce, and brown sugar until smooth.
- Pat the cod fillets dry and place on a foil-lined baking sheet. Brush generously with the miso glaze on all sides.
- Broil the cod 6-8 minutes (watch closely, broilers vary), until the glaze is caramelized and bubbling and the fish flakes easily with a fork and reaches 145°F internally.
- Halve the bok choy lengthwise. Heat the sesame oil in a skillet over medium-high heat and cook the bok choy cut-side down for 3-4 minutes, until charred and just tender-crisp.
- Serve the cod over rice with the bok choy alongside, topped with sesame seeds and sliced scallions.
