Miso-Glazed Salmon with Sesame Green Beans and Rice

Ingredients

Quantities are for 4 servings.

  • 1 1/4 lb Salmon fillets
  • 2 tbsp White miso paste
  • 1 tbsp Honey
  • 1 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 tsp Fresh ginger, grated
  • 1 lb Green beans
  • 1 tsp Sesame oil
  • 1 tbsp Sesame seeds
  • 2 each Scallions, sliced
  • 2 cups (dry) White or jasmine rice

Instructions

  1. Start the rice first: cook it according to package directions (about 15-20 minutes). Keep it covered so it stays warm while you finish the salmon.
  2. While the rice cooks, whisk together miso paste, honey, soy sauce, rice vinegar, and ginger in a small bowl.
  3. Pat salmon dry and place in a shallow dish; pour half the miso mixture over and let marinate 10 minutes. Save the other half for basting.
  4. Heat a skillet over medium-high heat (or heat the broiler); cook salmon 4-5 minutes per side, or broil 8-10 minutes, until it flakes easily, basting with the saved glaze.
  5. While the salmon cooks, steam or sauté green beans until crisp-tender, about 5 minutes; toss with sesame oil and sesame seeds.
  6. Serve salmon over rice with green beans alongside, garnished with scallions.
