Pan-Seared Cod with Brown Butter & Capers

Ingredients

Quantities are for 4 servings.

  • 1 3/4 lb Cod fillets
  • 4 tbsp Unsalted butter
  • 2 tbsp Capers
  • 2 each Lemons
  • 2 cloves Garlic
  • 1/4 cup All-purpose flour
  • 1 bunch Parsley
  • 1 lb Green beans

Instructions

  1. Trim the green beans and steam or blanch them in boiling salted water for 4-5 minutes, until bright green and tender-crisp. Drain and set aside.
  2. Pat the cod fillets very dry and season with salt and pepper, then dust lightly with the flour, shaking off the excess.
  3. Heat 2 tablespoons of the butter in a large skillet over medium-high heat until foamy. Add the cod and cook 3-4 minutes per side, until golden and the fish flakes easily with a fork and reaches 145°F internally. Transfer to plates.
  4. Reduce the heat to medium and add the remaining 2 tablespoons butter to the skillet. Cook 1-2 minutes, swirling constantly, until the butter turns golden-brown and smells nutty — watch closely, as it can go from browned to burnt quickly.
  5. Add the minced garlic and capers to the browned butter and cook 30 seconds. Remove from the heat and stir in the juice of 1 lemon.
  6. Spoon the brown butter sauce over the cod, sprinkle with chopped parsley, and serve with the green beans and the remaining lemon cut into wedges.
