Piri Piri Shrimp Skewers

Ingredients

Quantities are for 4 servings.

  • 1 1/2 lb Shrimp, peeled and deveined
  • 3 tbsp Olive oil
  • 2 each Lemons
  • 4 cloves Garlic
  • 1 tbsp Smoked paprika
  • 1/2 tsp Cayenne pepper
  • 1 each Red bell pepper
  • 1 1/2 cups White rice
  • 1 bunch Parsley
  • 1 pack Wooden skewers

Instructions

  1. Soak the wooden skewers in water for 20 minutes so they don't burn on the grill.
  2. In a bowl, whisk together the olive oil, juice of 1 lemon, minced garlic, smoked paprika, cayenne, and a pinch of salt to make the piri piri marinade. Add the shrimp and toss to coat. Cover and marinate in the refrigerator 15-20 minutes (shrimp marinates quickly, so don't go much longer or the citrus will start to firm up the texture).
  3. Cook the rice according to package directions.
  4. Cut the bell pepper into 1-inch chunks. Thread the shrimp onto the soaked skewers, alternating with pieces of bell pepper.
  5. Heat a grill pan or outdoor grill to medium-high heat and cook the skewers 2-3 minutes per side, until the shrimp are opaque all the way through with no gray or translucent centers.
  6. Serve the skewers over rice, sprinkled with chopped parsley and the remaining lemon cut into wedges.
