Provençal Baked Tilapia with Tomatoes & Olives

Ingredients

Quantities are for 4 servings.

  • 1 3/4 lb Tilapia fillets
  • 1 pint Cherry tomatoes
  • 1/2 cup Kalamata olives, pitted
  • 3 cloves Garlic
  • 2 tbsp Olive oil
  • 1 tsp Herbes de Provence
  • 1 each Lemon
  • 1 tbsp Capers
  • 1 loaf Crusty bread
  • 1 bunch Parsley

Instructions

  1. Heat the oven to 400°F. Halve the cherry tomatoes and slice the garlic.
  2. In a baking dish, toss the tomatoes, olives, garlic, capers, olive oil, and herbes de Provence with a pinch of salt and pepper.
  3. Pat the tilapia fillets dry, season with salt and pepper, and nestle them into the dish among the tomatoes and olives. Squeeze the lemon juice over the top.
  4. Bake 15-18 minutes, until the tilapia is opaque throughout and flakes easily with a fork (an instant-read thermometer should read 145°F in the thickest part).
  5. Spoon the warm tomatoes, olives, and pan juices over the fish.
  6. Sprinkle with chopped parsley and serve with crusty bread for soaking up the juices.
