Sheet-Pan Garlic Butter Salmon with Green Beans & Cherry Tomatoes

Ingredients

Quantities are for 4 servings.

  • 4 each (6 oz) Salmon fillets
  • 1 lb Green beans, trimmed
  • 1 1/2 cups Cherry tomatoes
  • 3 tbsp Butter, melted
  • 4 cloves Garlic
  • 1 tbsp Olive oil
  • 1 each Lemon
  • 2 tbsp Fresh parsley, chopped

Instructions

  1. Heat oven to 400°F and line a large sheet pan with foil or parchment for easy cleanup.
  2. Toss the green beans and cherry tomatoes with the olive oil and a pinch of salt and pepper, and spread them over one side of the sheet pan.
  3. Mince the garlic and stir it into the melted butter. Pat the salmon fillets dry and place them on the empty side of the pan, skin-side down if applicable. Brush the tops generously with the garlic butter, and season with salt and pepper.
  4. Roast 12-15 minutes, until the salmon flakes easily with a fork and reaches 145°F internally at the thickest part, and the green beans are tender-crisp.
  5. If the vegetables need more time after the salmon is done, remove the salmon to a plate, tent with foil, and let the vegetables roast a few minutes longer.
  6. Squeeze fresh lemon juice over everything and sprinkle with chopped parsley before serving.
