Ingredients
Quantities are for 4 servings.
- 2 lb Chicken breasts
- 3 each (large) Sweet potatoes, cubed
- 2 heads Broccoli, cut into florets
- 4 tbsp Olive oil
- 4 cloves Garlic
- 3 tbsp Honey
- 2 tbsp Soy sauce
- 1 tsp Paprika
Instructions
- Preheat oven to 425°F and line a sheet pan with parchment paper.
- In a bowl, mix the honey, 2 tablespoons of the olive oil, minced garlic, soy sauce, and paprika.
- Toss the sweet potato cubes with 1 tablespoon olive oil, salt, and pepper. Arrange on one end of the sheet pan.
- Roast for 15 minutes, then remove the pan and flip or stir the sweet potatoes.
- If your chicken breasts are especially thick, slice them in half horizontally (like a hamburger bun) so they cook evenly. Place the chicken on the middle of the pan and brush generously with the honey-garlic mixture.
- Toss the broccoli with the remaining tablespoon of olive oil, salt, and pepper, and add it to the empty space on the pan.
- Roast for an additional 20 minutes, until the chicken reaches 165°F internally and the broccoli is tender with some charred edges.
