Ingredients
Quantities are for 4 servings.
- 1 1/4 lb Kielbasa sausage, sliced
- 1 each (small) Green cabbage, cut into wedges
- 1 1/2 lb Baby potatoes, halved
- 1 each Yellow onion, sliced
- 3 tbsp Olive oil
- 1 tsp Caraway seeds
- 1 tsp Garlic powder
- 3 tbsp Whole grain mustard (for serving)
Instructions
- Heat oven to 425°F and line a large sheet pan with foil.
- Toss the potatoes with 1 tablespoon of the olive oil, half the garlic powder, and a pinch of salt and pepper. Spread in a single layer on the sheet pan and roast 15 minutes.
- While the potatoes start roasting, toss the cabbage wedges and sliced onion with 1 tablespoon olive oil, the caraway seeds, remaining garlic powder, and a pinch of salt.
- Remove the pan and push the potatoes to one side. Add the cabbage, onion, and sliced kielbasa to the pan, drizzling the kielbasa with the remaining tablespoon of olive oil.
- Roast 18-20 minutes more, stirring once, until the potatoes are fork-tender, the cabbage is tender with browned edges, and the kielbasa is heated through and beginning to char in spots (it's fully cooked already, so this step is about browning and reaching a safe reheated temperature of at least 165°F).
- Serve with whole grain mustard on the side.
