Cooking for 6 or more? You may need to split this between two pans or pots (or cook in batches) so it cooks evenly and browns instead of steaming.
- 14 oz Smoked sausage (such as kielbasa), fully cooked
- 1 1/2 lb Russet potatoes
- 1 each Yellow onion, diced
- 1 each Bell peppers (assorted colors)
- 4 each Eggs
- 2 each Green onions
- 3 tbsp Vegetable oil
- 1 tsp Smoked paprika
- 1/2 tsp Garlic powder
- 3/4 tsp Salt
- 1/2 tsp Black pepper
Instructions
- Rinse and scrub the potatoes and cut them into 1/2-inch cubes (no need to peel). Put them in a large microwave-safe bowl with 2 tablespoons of water, cover with a microwave-safe plate, and microwave 5-6 minutes, stirring once halfway, until just tender when poked with a fork. Drain well and pat dry; this head start is what gets the hash done in 30 minutes.
- While the potatoes cook, dice the onion, rinse and dice the bell pepper, slice the sausage into 1/2-inch coins, and rinse and slice the green onions.
- Heat 1 tablespoon of the oil in a large (12-inch) skillet over medium-high heat. Brown the sausage 3-4 minutes, then move it to a plate.
- Add 1 more tablespoon of oil and the potatoes in a single layer. Cook 6-7 minutes, stirring only every couple of minutes, until golden and crisp on the edges. Stir in the onion and pepper and cook 4-5 minutes more, until softened.
- Return the sausage to the pan with the paprika, garlic powder, salt, and pepper, and stir for 1 minute. Turn off the heat and cover the skillet to keep the hash warm while you cook the eggs.
- Heat the last tablespoon of oil in a large nonstick skillet over medium heat (use a second skillet or cook in two batches if the eggs are crowded). Crack in the eggs, wash your hands after handling raw eggs, and cook 3-4 minutes, covering the pan for the last minute, until the whites are completely set. Cook the yolks longer if serving anyone young, elderly, or pregnant, since runny yolks are not fully cooked.
- Divide the hash among 4 plates and top each serving with a fried egg and the sliced green onions.
