Some nights you want dinner on the table fast, without a drive-through and without standing at the stove for an hour. This is a full week of exactly that: six casual favorites, every one of them 30 minutes or less, built around one shopping list so you only make one trip to the store.
How a dinner really gets done in 30 minutes
A "30-minute dinner" only works if the recipe is written around the clock. Each of these six uses a shortcut or two so nothing waits on anything else:
- Thin slicing. The cheesesteak chicken is partly frozen first, then sliced paper thin, so it cooks in 3 to 4 minutes a batch instead of 10.
- A head start in the microwave. The potatoes for the hash get 5 to 6 minutes in the microwave before they hit the skillet, which is what gets them crisp in time.
- Doing two things at once. The oven fries bake while you slice and cook, the pasta boils while the cheese sauce builds, and the first grilled cheeses cook while the tomato soup simmers.
- Starting the rice first. Both rice dinners tell you to put the rice on before anything else, because it is the one thing you can't rush.
The 30 minutes assumes you read the recipe once before you start and work through the steps in order, with the stove and a clean counter ready.
The 6 dinners
- Philly Chicken Cheesesteaks with Fries and Cheese Sauce: thin-sliced chicken, peppers, and onions in toasted hoagie rolls with melted provolone, plus oven fries and a warm cheese sauce for dipping.
- Smoked Sausage and Potato Hash with Fried Eggs: crispy potatoes, smoked sausage, peppers, and onions in one skillet, topped with a fried egg.
- Shrimp Fried Rice: seared shrimp, scrambled egg, peas, carrots, and green onions stir-fried with cooled rice and soy sauce.
- Chicken Burrito Bowls with Cilantro-Lime Rice: spiced chicken and peppers over cilantro-lime rice with black beans, corn, avocado, salsa, and sour cream.
- Grilled Cheese with Creamy Tomato Soup: golden buttery grilled cheese with a velvety tomato soup made from a can of crushed tomatoes.
- Smoked Sausage Mac and Cheese: stovetop sharp cheddar mac and cheese with browned smoked sausage.
Every one of these is a full recipe with exact quantities and step-by-step directions. You can open them one at a time, or get all six at once:

One shopping trip, a few bulk buys
The week is planned so a handful of packages do double duty:
- One 3 lb pack of boneless skinless chicken breasts covers both the cheesesteaks and the burrito bowls (1 1/2 lb each).
- Two 14 oz packages of fully cooked smoked sausage (kielbasa) cover the hash and the mac and cheese.
- One 16 oz bag of shredded sharp cheddar covers the cheese sauce for the cheesesteaks and the mac and cheese.
- One bag of white rice covers the shrimp fried rice and the burrito bowls.
Bell peppers, onions, green onions, eggs, and milk also show up in more than one dinner, so the combined list adds them up for you.
A quick note on food safety
Fast cooking is still safe cooking if you hit the numbers. Chicken should reach 165°F, and shrimp are done when they are pink and opaque all the way through. Cook egg whites until fully set, and cook the yolks through if you're serving anyone young, elderly, or pregnant. The smoked sausage is sold fully cooked, so it only needs to be heated through. Wash your hands, boards, and knives after raw chicken, shrimp, and eggs, and refrigerate leftover rice within an hour.
Cooking for a crowd?
All six recipes scale from 1 to 12 servings. Once you get to 6 or more servings, each recipe will remind you that you may need to split the cooking between two pans or pots so everything browns instead of steaming.
