Lemon Garlic Shrimp Linguine

Ingredients

Quantities are for 4 servings.

  • 1 lb Large shrimp, peeled and deveined
  • 1 lb Linguine
  • 4 tbsp Butter
  • 4 tbsp Olive oil
  • 6 cloves Garlic
  • 1/2 cup White wine
  • 1 cup Fresh parsley, chopped
  • 1 each Lemon, juiced
  • 1/2 tsp Red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil and cook the linguine to al dente, reserving 1 cup of the pasta water before draining.
  2. While the pasta cooks, season the shrimp with salt and pepper and cook in a skillet with 1 tablespoon olive oil over medium-high heat, about 2 minutes per side until pink and opaque. Remove and set aside.
  3. In the same skillet, sauté the minced garlic in the remaining butter and olive oil over medium heat.
  4. Add the white wine and reduce by half, then add a splash of the reserved pasta water and the lemon juice.
  5. Toss with the cooked pasta, shrimp, and parsley, adding more reserved pasta water as needed to loosen the sauce.
  6. Season to taste with salt, pepper, and red pepper flakes.
